1 T olive oil
1 minced garlic clove
1 large yam
1 T Mrs Dash Lime Fiesta seasoning
1 cup water
Heat one tablespoon olive oil in a large sauce pan. Add one minced garlic clove and half an onion, chopped. Saute until onions are translucent. Add a peeled yam, cut into bite sized cubes. Season well with salt and pepper and 1 tablespoon mrs dash lime fiesta, and squeeze the juice from a lime in the pan. Add a cup of water and cover. Steam for about 5 minutes until sweet potatoes are soft. Serve: corn tortilla, vegetarian refried beans, Jasmine rice, sweet potatoes and onions, diced green chiles, mozzarella, and shredded lettuce. So good!
