Hey guys! Sorry for the lull in recipes on here lately, things have been crazy busy with our renovation and impending move! We move in to our new house next weekend though so I’m looking forward to the light at the end of the tunnel. Although I haven’t had tons of time to cook lately, on Sunday I really wanted to make an effort to have a special family dinner. I’m also trying to use up the random things in my pantry, and I happened to find a bag of sun dried tomatoes that needed to be eaten. I made this stuffed chicken and it was so easy and flavorful. I know you all will love how fast it comes together, yet how fancy and special it feels. Hope you enjoy!
Sun Dried Tomato and Feta Stuffed Chicken

3 chicken breasts
1/4 cup thinly sliced sun dried tomatoes
1/4 cup crumbled feta
1 sprig rosemary
1 T olive oil
salt and pepper
Cut a slice in the side of your chicken to create a pocket. Mix next 4 ingredients in a small bowl. Put a spoonful of the mixture in each chicken pocket and secure with toothpicks. Place chicken on a foil lined baking sheet. Squeeze the lemon over the chicken, then generously season with salt and pepper. Bake at 375 for 25-30 minutes. I served it with linguine that I tossed with olive oil, lemon juice, fresh garlic, salt and pepper.
