This simple dinner in my cast iron skillet was perfect. Chicken breast and red potatoes, cooked in a bit of butter with thyme and orange slices and seasoned with salt and pepper and add a splash of broth. I cooked for a few minutes on each side (with a lid on), then popped it in the oven and finished it in there until the chicken was cooked and the potatoes were soft. Very simple, delicious, and wholesome!
