Herb Crusted Salmon

1/2 lemon
2 lbs fresh salmon
salt and pepper to taste
2 T fresh thyme
2 T fresh oregano
1T butter

herb crusted salmon and roasted red potatoes. This is so easy! And very healthy too. recipe: squeeze juice from half a lemon over 2 lbs of fresh salmon. Sprinkle with salt and pepper and then rub two tablespoons of fresh chopped thyme and oregano on top. Melt 1 T butter in a saucepan and sear the salmon, pink side down, for about 30 seconds until golden brown and slightly crispy. Place on a foil-lined cookie sheet and broil for about 11-13 mins or until cooked all the way through (don’t over cook though, most people over cook salmon which makes it very dry.). That’s it! Serve with lemon wedges to squeeze on top. Enjoy!
