Mediterranean Apricot Chicken and Wild Rice

2 cups wild rice
3 cups water
1 1/2 cups chicken broth
1/2 tsp cumin
1/2 tsp cinnamon
1/2 tsp oregano
1 tsp salt
1 cup sliced dried apricots
5 lbs breasts and thighs
1 T butter
additional chicken broth if needed

Recipe: in a large pot, add 2 cups organic wild rice, 3 cups water, and 1 1/2 cups chicken broth. Bring to a boil. Meanwhile, in a small bowl, combine 1/2 tsp each of cumin, cinnamon, and oregano and 1 tsp salt. Add to the rice water. Add 1 cup sliced dried apricots to the pot. Reduce heat, cover, and simmer for 30-35 mins. Meanwhile, season about 5 lbs chicken (breasts and thighs, cut in strips) with salt pepper and oregano. Heat 1 T butter in a large skillet. Working in batches, cook the chicken in the skillet, about 6-8 mins on each side, adding a splash of chicken broth if needed. Remove and set aside, covering with foil. Repeat until all chicken is cooked, adding additional butter and broth in between batches. When all chicken is cooked, sprinkle with cinnamon and cumin. When rice is cooked, taste it; you’ll need to salt it generously to your own taste. Add the chicken to your pot and serve. Enjoy!
