Garlic Veggie Pasta

1 package bow tie pasta
2 T olive oil
3 zucchinis
1 red pepper
1 cup vegetable or chicken broth
salt, pepper, italian seasoning to taste
1 minced garlic clove
1 T butter
1 cup shredded parmesan cheese

Recipe: boil a package of bow tie pasta. Meanwhile, heat 2T olive oil over medium high heat in a large skillet. Add thinly sliced vegetables–I used my mandolin to slice 3 zucchinis and a red pepper. Add a cup of veggie or chicken broth, salt, pepper, and Italian seasoning to taste, and a clove of minced garlic. Cover and simmer until veggies are soft. Add a tablespoon of butter and a cup of shredded parmesan cheese and stir to combine. Toss with your noodles and serve.
