I think salmon is intimidating for a lot of people. It seems like such a fancy meat to make for dinner, and it can be tricky to cook perfectly so it doesn’t end up dry. However, it is one of my kids very favorite foods and has almost zero prep time. One tip to make sure it doesn’t end up dry is to cook it to medium/ medium well. It’s not like chicken, it’s okay if its still underdone in the middle! It will continue to cook after taking it out of the oven and by the time it’s on your plate it will be perfect. And the sweet and tangy flavor is sure to please even the pickiest of palettes. Go make it!
Maple Dijon Salmon
recipe by Parsley and Pepper
2 T Dijon mustard
2 T pure maple syrup
2 lbs fresh, not frozen, salmon filets
1 T dried thyme
salt and pepper
Cover a cookie sheet with foil, place salmon on it, and pre heat the oven to 375. Mix the Dijon and syrup together. Brush it all over the salmon. Sprinkle with salt and pepper and the thyme. Bake for 30-35 minutes.
