Caprese pasta

1 box tri color rotini pasta
1/3 cup olive oil
3 T balsamic vinegar
1 T dijon mustard
8 0z fresh mozzarella
shredded fresh basil
1 pint grape tomatoes
parmesan cheese, shredded, to serve

This is SO easy, if you can boil noodles, you can make this. Recipe: boil a box of tri color rotini pasta. Meanwhile, mix 1/3 cup olive oil, 3T balsamic vinegar, and 1T dijon mustard in a small bowl. Toss pasta with vinaigrette, 8 oz fresh mozzarella cut into bite-sized cubes, a handful of shredded basil, and a pint of grape tomatoes sliced in half. Sprinkle Parmesan over the top along with a generous pinch of sea salt. Enjoy!
